I dont know a lot about how sound cards work and im looking at buying a Creative OEM PCI-E Sound Blaster Z and I understand that I can run 5.1 audio using the optical cable but can I also run 5.1 audio from the 3 audio cable ports also supplied?

As far as I know yeah you can

Yea they should have 3 3.5mm jacks:
Front, Center+sub, Side/Surround

Think they would only provide one bog-standard 3.5mm to 3.5mm cable, so you'd need to get the extra cables for the extra ports.
