Hi.

I'm new to this and I was wondering when using crossfire, weather the two cards have to be the reference model, or weather they can be non reference?

I presume non reference does indeed work, but I was just checking.
Are there any brands that don't?

I was thinking of doing this later on down the line with the RX 480.

non reference can work just fine. People usually run CF/SLI with reference model because it offers, according to their belief, the best way to lure all the hot air out with the reference/blower style cooler. In reality, it is only partially true in the case when your chassis is not well designed or has very limited airflow. As long as the airflow is good enough, CF/SLI non-ref won't be a problem, heat wise.
 
Non-reference works ok. Make sure you have good ventilation in the case, though. Reference cards are so designed in order to expel the hot air from the case. Non-reference cards generally just dump the hot air in the case.
 
I have a non reference crossfire setup.
I did change the mb to one that gave better spacing between the cards as prior to that the top card was getting hotter than I was comfortable with.

Thanks everyone, that's good news then.

It'll be in the future I'd be doing this anyway, so I can bare all that in mind when I make upgrades.
