Looking to buy 2 x 4850s, is it just a question of placing both graphics cards into the PCI-E slots then connecting the bridge? Do you have to do anything in BIOS etc?

Put them into the slots, connect the bridge (and power cables) boot to windows install ati drivers, reboot go into catalyst control center, go to crossfire option and check the box saying enable crossfire.
 
If you're using that 680i motherboard then crossfire won't work at all. The board you have is an Nvidia SLI motherboard, not compatible with crossfire setups.

You would need to look for an Intel x38/x48 for dual x16 crossfire or a P45 board for dual x8.
