Tried browsing to my iPhone earlier to install a theme I'd downloaded and the website said to put it in the Summerboard folder.... problem being there isn't one

There isn't a winterboard folder either so where do I put any themes that I've downloaded? Do I just create the relevant folders?

When I SSH into my phone, I think I hit back twice, and they're is a folder called Themes.

I unrar the rar, and drag the theme into this folder. Basically, look out for a folder called Themes...

Thats how I do mine via SSH.

Ok finally got the theme working now for another question...

How on earth do you get Status Monitor installed? I've downloaded the latest version but the place you need to put the .deb file again isn't there. Presumably there's a base program that I need to install before putting the latest version on?

Have you got cydia installed? It usually downloads the debs and does all the unpacking/installing for me.
