Cyclocross

I've done some cyclocross racing. It's brilliant fun :D
Not really the time of year for it now though. It's not as much fun without mud/snow. Racing in a skinsuit in -2 is great :p

well I was looking at a £2.5k Specialized that seemed to fit most of the bills. I'm quite excited by the prospect

Don't forget the tyres etc.

TBH a good frame (Kinesis Crosslight etc) hydro discs and 1x11 chainset would be my lump of choice. Then spend more on tyres and spare wheels. or 2x1.25k bikes if you're really going to get into it to swap out each lap and have someone in the pits to clean for you. Keeping chainset relatively cheap means less to fail and cheaper to fix when it will inevitably go wrong.
