Anyone know when DDR5 will be a requirement? I might hold out for Zen2 next year. But I already have a stack of DDR4 memory. Should I be worried that 2019 CPUs might use DDR5? Or is that a ways off yet?

Well DDR4 spec was ratified 2012, but it didn't hit any platform until X99 in August 2014 and went mainstream with Skylake exactly a year later. That's 3 years. The DDR5 spec hasn't even been finalised as far as I know, but even if we follow the DDR4 timeline, we're still at least 3 years away from mainstream DDR5 requirements.

Apparently Samsung are producing LPDDR5 "soon" but that's for 5G and cars, and probably a major jump of the gun considering DDR5 isn't finalised, let alone the low-power variant.

So no, I wouldn't worry.
