Recently upgraded my Internet but the current WiFi Router clocks out the Ethernet to about 500mb, watching the monitor it's maxing out the cpu in it so was wondering what a decent upgrade that might as well be 6e/7.

I bought a Linksys Hydra Pro on a Warehouse deal (Used - Like New) for £139 - it was the cheapest Triband WiFi6E router that didn't require ordering from China. It's been great.

Other thought would be to separate out the router and WiFi access point to two separate devices
Yeah, that every time imo. There are hundreds of threads in this subforum for exactly your question, so try a search. Best bet is to build your own (x86 box, or 2.5Gb NanoPi R5C for under £50), and run OpenWRT/OPNsense/etc on it. After that there are solid pre-made offerings from Mikrotik, Ubiquiti etc.

In fact, if you do want a pre-build I have a TP-Link ER605 v2 literally brand new, bar one hour of testing. It didn't do what I wanted (a /29 of static IPv4 plus /56 static IPv6) and is more 'plug and play'. If you have regular gigabit broadband with no multiple static IP blocks it'll do you perfectly, albeit you'll need a separate wireless AP. I'm happy to stick it in MM for a token cost / postage and packing if you want it. It's only stuck in a drawer somewhere. It'll do solid gigabit all day, it just can't handle the block of IPs I needed it to.

Yea you mean a network switch? I have limited understanding but the actual WiFi I have right now would be more than enough.
No a separate wired only router, and then a separate access point (e.g. Unifi)

The router side of things then doesn't need to be upgraded as often, but the wireless access point can be separately. It also gives you the option of repositioning the Wireless AP to a more central place for best coverage, rather than just wherever your internet comes into your house.
