dedicated server options?

we are looking to move to a dedicated server soon (to move away from sagepay form and up to the more integrated solutions) and also to have a server that is more under out control.

my options are:

• set up in-house, but would require a solid fast-as-hell connection which could be very costly i'm assuming

• get a dedicated server from somewhere like vidahost

• possibly use the Amazon EC2 service? have only read a bit on this but looks really promising?

what do you reckon the best option is?
 
Scrub in house from the list, there's a reason serious businesses don't do it. I've worked with companies with multiple resilient gigabit links into their offices and they didn't host their website in house, too many things to go wrong and while you can patch up round the edges datacenters are designed from the ground up for reliability and uptime.

If you're planning to take payments you need to be aware of PCI and it probably rules out EC2 for at least that part of the service...

Which leaves a hosted server.

Personally unless you're a real expert I'd suggest getting a managed hosting service so your provider will be able to help you out with any issues you can't resolve (and they're going to be dealing with these issues every day so they'll be good at it).
