Dedicated Webserver Management

My company recently bought a dedicated server from fasthosts running fedora core 5, to host our company site on. As me and my manager are responsible for looking after this box, we have to look at ways in which to make it more secure.

It is running some management webserver called matrix control panel is it worth shutting this down? I have already disabled root SSH logins and made everyone SSH to it using their own login then elevating to root if needed.

As for patch management does the hosting provider take care of this? reason is we have had it for a few months now and whenever i tell yum to do an update there is never any packages to be updated.

Any advice or recommendations on configuration would be appreciated :)
