Deep fat fryer

The Breville one looks to be a winner...I like the fact you can take it apart for cleaning:-

Easy cleaning does sound good for my lazy bones. :D

Get one that goes fairly low in temperature so you can do twice fried chips. Ours only goes to 170 and you need it to go lower to do it properly.

I've never heard of twice fried chips before.

How often do you change your oil, what do you like using, vegetable or sunflower?

No idea. This will be my first fryer.

I have the old version of this one. Very simple, temps from 130 to 190c which is a must if you intend on doing chips.

I also recommend double cooked chips but if you have the time check out triple cooked.

Now we are on triple cooked chips. Help me understand these multi cooked chips. :)
 
This is how I do triple cooked chips:

Get some frying potatoes, I recommend desiree but maris pipers are fine.

Wash, peel then chop but chop very thick.

Submerge in water (no salt) for at least 15 minutes but they will be fine like this for hours. Drain and rinse.

Into pan, submerge in water, pinch of salt, bring to the boil, turn down to simmer for 10 minutes.

Be carfull now as they're quite delicate. Drain and rince with cold water place on the side and leave them half hour.

Pre heat fryer to 130c place chips in basket and lower, fry for 5 to 6 minutes, lift basket from fryer. At this point they can be drained, cooled and refrigerated and should be good for 24 hours. But if you want them straight way, turn fryer up to 190c, then when hot lower chips back in until crispy (8-10 mins).

Serve.
