does anyone know is it possible to defrag / clean the registry of traces of old apps and installs left behind ?
 
It's not needed, you could do a restore, or just delete the old app folders manually but thats requires a jailbreak

There is no registry on the iPhone, or any of the Apple OSs, for that matter.

The only thing that you will want to do when it comes to the iPhone is to uninstall unrequired software (that really can slow your phone down a hell of a lot). It's the only major issue that Cydia has; dependencies aren't uninstalled if they aren't required.
 
As far as I understand it, solid state memory has a limited number of read/write cycles - less so than magneto-optical hard drive platters. Therefore the data is written (scattered) across the whole SSD to extend life, rather than reading/writing to the same sectors each time. The read speed is unaffected as it's solid state memory, so there's no mechanical read arm to move, like hard drives. Hence why defragging is good only for mechanical hard drives - the arm doesn't have to dance all over the platter.
