When I buy a pack of 8 sausages, I separate into two lots of 4, wrap in clingfilm and freeze them.

I took 4 cumberland sausages from the freezer last evening and put them on my kitchen worktop to defrost.
I was very tired and ended up sleeping without having dinner. About 3am I woke up and remembered the sausages. Went into kitchen, they were fully defrosted and I put them in the fridge.

Is that ok, safe to put in fridge after defrosting at room temperature? They weren't sweaty or anything and kitchen temperature wasn't warm.

Thanks guys. Yep, I've got a Thermapen mk4 which is amazingly fast and accurate. I always poke my meats with it to ensure they're thoroughly cooked through to the correct temperature. I use this as my guide.

Pork sausages 160f/71c
Chicken 165f/74c
Leftover food reheated 165f/74c
Egg whites 160f/71c for Swiss meringue

Perfect. Late lunch.
