There are dedicated distros designed for use as firewalls etc. Not sure what the latest and greatest versions are though.

Clamav can do virus scanning, but there are other (possibly better) options.
 
I setup firewall boxes using ubuntu and it works fine.

Setup includes:
Shorewall
Squid
Squidguard
Snort
Portsentry
Dansguardian (for schools etc)
Webmin
logwatch
P3scan (e-mail proxy with virus spam scanner support)
Clamav
Spamassasin.
SSH

All are in the repositories and install through Synaptic
