DDR500 is just an overclocked DDR400 if I understand correctly. DDR400 is the standard and if you overclock the stock speed it will go over the DDR400 speed making it DDR500. Companies sell DDR500 sticks because it gives a guaranteed DDR500 speed.
I have however just today had problems installing DDR500 sticks into my motherboard (DFI), not too sure what was the problem but the PSU has blown now so will have to wait to RMA that before anything :s LOOONNNGG!!!
DDR400 (PC3200) is the highest 'official' DDR speed. You have memory that is able to run faster than this at its stock settings. But it will down-clock to DDR400 if necessary.
