Coretemp will display all core temps in the bar, but not sure about the GPU.

realtemp do that (cpu and gpu at the taskbar)

Have you selected your gpu (ati or nvidia) in RealTemp settings?

You have to do this so you can select the taskbar field.

Also, if you google "How To: Load RealTemp at startup without disabling UAC", you can get it to launch when you start windows without getting the warnings, (i don't want to post the link as i think it's against the rules).
