Yes, Eve is very complex, but it's only as complex as you want it to be.
get yourself the trial, run a few missions and join somewhere like EVE UNIVERSITY and they'll help you.
With Eve you need a decent active corp, that's where the fun lies. If you have that everything else comes with time

Try Planetside 2, nothing like as good as the first one, but still not a bad game by todays standards, the classics are still the best though IMO, BF2 still going strong.
Darkfall may be up your street, it's in a high fantasy setting but uses a similar setup to EVE online for levels, items e.t.c. Renowned for the large amount of time that's required to be put into it to get the most out of it.

Is it specifically an RPG you are after?
If not, its hard to go past Starcraft 2 as a pick up/put down game with tons of depth.
Battlenet is often taken for granted - being able to log in, and within a minute be playing a game in any format (1v1, 2v2, 3v3) vs other people of a similar skill level to you is fantastic.

Dark Souls might be worth looking into - brilliant action RPG with some very fun multiplayer (both PvE and PvP), I've spent hundred of hours on it. You don't happen to have a PS3 do you? Cos DUST 514 may be perfect for you if you do

Just wont run on my nVidia 8800 lol.
