For the processor, i'd go i5-2500k, as the threads aren't any use for gaming, and it will save money, for no less performance in your games. As for the memory, most people agree 4gb is enough, THESE are currently on offer, so here's another saving :)
 
- 2500K for games. Same performance and cheaper.
- Asus P8Z68 motherboard. Sabertooth just not the best option at the price.
- 8GB low profile memory (Corsair Vengeance LP, XMS3, Kingston HyperX). Or 4GB, Not begrudging 8GB but a place to save money.
- Good GPU.
- Tagan 650W should do (?). Needs comfirmation.

Freezer pro is no good for overclocking. Get a Akasa Viper, Gelid Tranquillo, Corsair A50... Up to Silver Arrow for best performance.

As Ryan says, the i5-2500K performs identically for games, as does 4GB of RAM. It's generally accepted that anything over 1600MHz has very little bearing on RAM gaming performance, and timings don't really affect it at all. Get Corsair XMS3- 8GB if you like, but 4GB is honestly plenty.

You need to replace that old PSU. Although the wattage is enough, demands of new graphics cards are very different to the old ones, so you really need a brand new PSU to deal with it. XFX are a good brand.

Also, a 570 is overkill right now. A GTX 460 is the best value for money card at the moment, and should be able to get to high on all your games, maybe even scraping max settings on some of them, for £150 less. A 560Ti will get you a few extra twinklies and is halfway between on price, but a 460 really is plenty (link). Bear in mind you only need an average FPS of around 40, and that Crysis and Metro 2033 are overdemanding outliers that you can take details down a notch on.
 
- You can afford a 570 OC, you should go for that. No point messing about really, or you'll up dissapointed not being able to run the latest and upcoming with all the eye candy.

- Under £50 for 8GB? Bargain. And ram speed don't have impact on sandybridge overclocking. Go with cheapest low profile 12800C9 ram.

- My concern would be about the PSU, but you still have a bit of margin for that in the budget. 650W for single GPU, or 850W if you plan on SLI later (that would be TRULY overkill :)).

Why would anyone want a Antec HCG 620W psu, when you can get a Antec new truepower 650 for the same price.
 
Its a much better PSU,

Modular cabling.
More power.
More connectors.
Free benchmark software.
 
I've just missed it from the listings.

Antecs are good, and the TruePower line is good. It's not fully modular but every little helps. It has almost full power available on the 12V rail.

Look up reviews on the Antec, especially its bigger brother, the 750W on jonnyguru. Should give a good idea what to expect.

Not sure about the RAM, but I'd stick to what I know. HyperX, XMS3, and Vengeance LP. For a quid, I'd get the Corsair as it's a well known quantity.
 
Well theres always something new around the corner so prices on current gen stuff do take a tumble, its also worth keeping an eye on the daily special offers as I have seen every now and then a killer price (say £20-30 off) on standard GTX570/6950's
