Just wondering how it affects the overall speed of the system.

I am currently look at 2 sets of ram for £55

One is a 12Gb DDR3 1333Mhz set (6x2gb) (latency 7-7-7-20)

the other is a 6Gb DDR3 1600mhz set (3x2gb) 8-8-8-24

Which one should I go for my i7 + SSD?

If I was on a budget of £55 you may as well for for the 12Gb DDR3 1333Mhz set, you could possibly clock the ram to some extent especially if you drop the timings down to 8-8-8-24 but it's not guranteed.

Talking a couple of fps difference at tops in games if that, 6GB of ram is more than enough for 99% of people anyway so something to think about.
