As title would there be a benefit in speed mainly gaming if i went S/B with i7 1155 of buy X58 with normal i7 ?

The processor you have now is actually fast enough for gaming along with that 6970.

You can overclock the 2500K, you can't (well not a lot) with the 2500.
Also the 2500K has a more powerful integrated graphics card (not that it makes much difference for a gamer with a discrete card).
Also, expect the resale price of the 2500 to be much lower than the 2500K, as not many people want a chip that can't OC.
However, to echo what the others have said - a Q9550 is an excellent CPU for gaming. Are you finding you are having performance issues with your current rig?
