It's a daunting task but take it one step at a time.

Start by going through your password manager, checking each login. If it still works and you don't need it, look for a delete option on the website. If there isn't one, create a throwaway email address. Change your details on that website to be the throwaway email address, then change the password to something completely random. Don't save the password and then blitz the email address without keeping a record of it. If you have a bookmark for that site, delete it.

Just to add to this, there are website that you can use to create a temporary email address and it will give you temporary inbox as well.

Here is one example

A year or two ago when I got rid of my Gmail account and switched to a more privacy friendly alternative, I went through every single account I could find in the past 15 years worth of emails and closed them all.

It took me about a week, and quite a lot of them involved contacting customer services to get it done, but it's definitely something worth doing if you can find the time. I only have logins for about 8 websites now, and my inbox is pretty much empty.
