Now that ultraviolet is gone, if a Blu-ray is sold with a digital download copy, what service does it use?

Depends...
Some don't work at all, some go with Google Play, some go with iTunes. Occasionally, it's only a crap encrypted WMV, that's generally only on old discs though.
