2x512 CL2 or 2x1GB CL3?

The CL2 stuff is corsair twinxms and the CL3 stuff is corsair value stuff.

I own both already, the so the one not going in my machine will be in my mums.

2GB (2x1gb CAS3 )for sure.. This will prevent paging which will slow your system should you have 1GB. You wouldn't really notice anything between the two timings however.
