I'd stick with two cards if in any doubt - certainly on my laptop if you disable the iGPU you'll get a big screen of much blackness. Even if yours doesn't have this architecture it allows it to stop using the discrete gfx card when doing nothing much, saving you power and so increasing battery life.
Depending on the laptop it may have a feature where it swaps between the internal and discrete, or uses both together when required. Which laptop model is it and what are it's specs?
The switching tech is pretty good in laptops now. Sounds like a pretty beasty laptop there probably is a way to force one card on all the time but I don't see much point!
