Disable/turn off exchange?

Is the a way to pause/disable/turn off exchange 2010? I don't want to uninstall it as it may be needed again later, and I don't want to turn the server itself off as the are other things running on it.

Would you not be able to just stop all the services associated with it?

If you're retiring Exchange then you should really uninstall it to remove references to it from AD.

If you might need messages then you can export the mailboxes. I'm assuming the needing it later part wouldn't be to route mail?
