I have both ports (on my 5850 and my Dell Ultrasharp U2410) but which connection should I use? I am currently using display port and I imagine it is better than DVI but I just want to confirm. Cheers

tbh from what I read DisplayPort will only benefit high resolutions say 2560x2048. Display port also carries 128-bit AES DisplayPort Content Protection (DPCP) as well as 40-bit High bandwidth Content Protection (HDCP). As the port is VESA approves, it's royaly free meaning it's cheap to manufacturer.

Personally, I don't see any benefit from having displayPort over DVI for the time being. That said, if both ends of your devices support it, then I don't think it does any harm not to use it.

There is no difference for simply displaying images on the U2410.. Amongst other things DisplayPort actually has slightly different colour space support but I'm not aware of any device making use of it.

At any rate DisplayPort has the capacity to support non-visual data transfer (e.g. a web-cam) because it uses a packet-based format.

As mentioned above, for the purpose you're using it DVI-D and DisplayPort are equivalent.
