I have become confused

I have domains registered with 123-reg.co.uk using their nameservers. I have a few A & CNAME records pointing at my IP and it all works.
The part that confuses me is that I recently installed Plesk to manage a few domains. In Plesk (and other panels) you can modify the DNS records.
Why would you do that in Plesk if the domain is pointing to 123-reg nameservers?
How does updating DNS in Plesk benefit the user if the domain points to 123-reg nameservers?
