I have a regular fiber optic connection where the modem is plugged into a router using a 20m cat6 cable. The problem is I want to move my PC back to the living room but keep the router where it is so I can still get a good connection with my bedroom's media center.

I will use the 20m cable to keep connected to the router but not sure how to then connect my PC to the router. Using another 20m cable seems silly if there is a better way to configure my network.

What's the best way to do this? Can I just use a network splitter?

The PC needs to stay connected to the LAN side of the router. You can't split the connection that comes from the modem to the router's WAN side.

If you aren't willing to move the router then you will need another long cable back from the bedroom to the living room. You could obviously use a wireless or Powerline connection, but a wire is the best option.
