do I stay office 2016 or go 365

New build PC is on its way and I have a decision to make.
Should I stay with Office 2016 which does what I need or should I go 365?
I still want my files kept locally but I like the idea of syncing to the cloud.
I'm not that familiar with MS 365 technically but my files are all sorted and in the correct folders
and file structure. Will 365 mess that up?
Also what happens when the day comes and I want to cancel?
Are my local files still accessible or does MS restrict them?
 
You should be able to get a free trial of 365. Give it a go and if you still prefer 2016 then stick with it.

I've been using 365 for a few years now and havent bothered with cloud sync up to this point. The way I have my files structured is exactly the same as it always has been, office makes no attempt to mess with that, it is simply a means to use the files you have created, the same as its always been. There is nothing to stop you from replicating whatever folder structure you have in whatever cloud storage service you choose to use.

With regards to MS restricting file access, this won't happen. Your files are yours and you would simply need to find another suitable piece of software in order to access them i.e no different to simply moving the files to another PC.
 
Or to libreoffixe. Free and doesn't take up 2tb of hard drive space

2TB? It's 3GB which is actually not that big nowadays. It's also so much better than libre but that's my opinion and your answer is far away from what was being asked in the OP

You can use OneDrive to Sync your files now, for free, without M365 as long as you have a Microsoft account so you can try it that way. M365 does give you more OneDrive space though so if you need a lot of space then you might want to consider it. This will keep your files in there folders and synchronised. It's also very easy to share and collaborate on files. You also get the web versions included, whilst not brilliant, are great if you just need to do a quick edit on the road. Is it worth it over Office 2016 and free OneDrive it would be very close. If you need the new functionality then maybe.

You also get all the mobile apps for free as well, that can be helpful

Been using 365 for a while, also check with your work to see if they are in any of the MS programs as I can get 365 for half price.

The size is really not an issue - unless you have an absolutely tiny drive. As the OP is already using 2016 this will be using a similar amount of space so not an issue. You're loosing a lot of functionality by moving to an inferior product and it's not what the OP has asked.

From what I recall I'd say the main differences are the cloud storage, use of web apps and the ability to have it installed on multiple machines.
