Cat5e is usually thinner and more flexible that Cat6. You still need to keep to the minimum bend radius so very sharp bends aren't possible.
Yes, the labelling is incorrect.
The colours are correct, the labels are wrong. How did you manage to find the only incorrect diagram on the entire Web?
Use T568B unless you have a good reason not to.
Every diagram I've seen assumes that the plug's clip is facing down/away from you.
BTW the way you linked that image probably breaks the forum rules.
