Looking for a game where I can play at a lesuirely pace, even walk away from it leaving it runnng and come back and carry on or just sit and watch events unfold where i can join in and influence and then watch my influence ripple out over the gameworld.

Do you get what I mean??
 
The Settlers, not sure about the newer ones in the series, but I used to just leave my game running while I popped to the shops, was a good test of your layout/managment to see how good/bad it was when you got back.

All of the game is fairly automated, you just choose where to put buildings and how the roads between them are connected, abit more to it than that but you get the idea.
 
You might like something like Onslaught Tower Defence (or similar), once you've built up a solid defence you can leave it for a bit.

Or maybe Pandemic II that disease simulation game.
