My previous system I bought here in 2010 (Ultima Vanquish) went pop this morning. RIP.

I've already got SSD/ HDD/ GPU. Am I missing anything from this build?
I need something which is generally pretty fast, reliable, with ease of swapping out HDDs.

Does faster ram actually equate to any meaningful performance increase?

On Skylake it seems to make far more difference than it used to, so definitely worth going for either 3000MHz or 3200MHz as CapitalOne said

No mate, you just need to go into the BIOS and set it to use XMP 2.0, it will set all the voltages & timings automatically then to run properly at 3000MHz / 3200MHz
