I need to transfer a domain from one provider to another.

Currently, someone else owns the domain. What do I need to tell him to do to release the domain so that I can register it in my name on another provider.

You want to do two different things here.
Get the domain under your name and also transfer it from one provider to another.

I would get the transfer done first as that should be quite straight forward.
If it is a .com, .net, .org address then you will need to start the transfer process from your account with your provider.
Once you start the transfer an email will be sent to the "Admin Contact" on the domain name.
All they need to do is agree to the transfer and the process will begin.
It will then take anything from 24hrs - 5 days to complete.

If the domain is a .uk then you need to ask the current holder of the domain to change the IPTag to that of your provider.
Once the Tag has been changed you can request the transfer from your provider.

To change the details of the domain owner - this is straight forward and free for .com, .net or .org domains.
Simply wait until the domain is under your control with your provider and then change all of the details - job done.
With a .uk address you can change all details except the Registrants Name for free and again via your providers control panel.
To change the Registrants Name it will cost you I believe £25 and you will need fax permission from the old owner confirming that the name can be changed.
 
It is an org.uk domain.

The host I am going with is Vidahost. What do I need to tell the current domain holder todo so that I can transfer the domain to them.

Can I setup the host now with Vidahost and let them sort it out?
 
You should order the transfer from Vidahost's end, and then ask your current registrar to change the IPS tag on the domain to Vidahost's tag (which I think might just be VIDAHOST)

THERMAL, still waiting for Nominet to sort out the VIDAHOST tag :(
