Do you think my 980ti sli is needed two 1440p and one 1080p multi monitor setup?

I'm kind of tempted to drip down from my 540air into a smaller case and just run one 980ti, be more portable for trips away.

If I were you I'd simply take one out or disable it and I'd check for myself.
Whatever people say on any forums is not going to be as accurate as that :)

Are you running games across multiple screens? If not and you're just using two for extra desktop space then they won't make any noticable difference to GPU usage.

Game on one 1440 gsync, films and browsing on the other 1440 and the 1080 is used for whatever else, normally corsair link.

Should be fine, I have a 980ti and game on one screen while watching films (I'm lying, it's usually stuff like He-Man) on a second and IM apps on a third.

Should be fine, I have a 980ti with 3 x 1440p monitors and haven't had a problem (like you, when I game it's usually only on a single monitor)
Of course, as you are used to SLI performance, you may see if differently. As Glanza points out, you should disable one and try it to see if you like it.
