Can anyone please help me out.

I need to open up a port to allow remote access to a certain computer we have on our network.

This used to work on a previous router (a basic Netgear N150) but I can't work out how to do the same thing on our new 'all singing, all dancing' Draytek

I think the port may of been 5003 - like an idiot I forgot to note down all of the old settings
 
Just looking at the port you guessed at. You might have been using VNC (5900) rather than RDP. Is TightVNC server or similar installed on the destination PC?
 
Is this the default Microsoft Remote Desktop?

I use the DrayTek 2860Vn-plus for work, and you can find port forwarding under NAT -> Port redirection. Click on a number under the Index column, then fill out the details. Make sure the enable box on the top is ticked before you apply the settings.

3389 is remote desktop.

Click NAT then Port Redirection. Fill out the blanks.
