This is the first time i've used a Gigabyte mobo so im lost. The BIOS is a bit confusing. I cant understand what i need to change to overclock...

What settings in the BIOS should i be tinkering with on this motherboard to get it to OC?

Thanks in advance.

At the moment the chip is running at 200 x 8 = 1.6Ghz which is weird as this is rated at 2.2Ghz.....

I am having exactly the same problem as you at the moment, can't really figure this out...

Right, got my E5200 to boot with:
CPU Clock Ratio: 12
Fine CPU Clock Ratio: +0.5

Enable CPU Host Clock Control and then;
CPU Host Frequency: 200

I found the default Multiplier (CPU Clock Ratio) on these forums, you will have to find the default Multiplier for your CPU and make the appropriate changes :)

@ OP here's a good starter guide for you get started on. Make sure you read it and apply! :D

Speedstep is causing the multi to drop from 11 to 8x200 in order to preserve power when not needed. As soon as the power is required by an application or game it will increase to the default multi which is 11 in your case. No need to worry or indeed manually adjust at this stage! ;)
