Dual boot - 2 drives?

Here's the deal...

Throwing a second PC together from old/new bits. It will be used to mess around with different Operating systems - I'm taking some classes (Window Server 2008, for example) and just want a machine I can experiment with.

Anyhoo, the machine will have a smallish SSD and a regular SATA hard drive. I want Windows 8 preview on one drive and Server on the other, then have the option to boot to whichever one I want when I start the PC.

How does one make a dual boot system using 2 different drives?

Not a clue, would like to know too. I wanted to back up my Game of Thrones Bluray on my PC and noticed my 128GB M4 wouldn't hold all 250GB so added my 2 spare 500GB Barracudas, turned out one had Vista on and one had Ubuntu and it just popped up with a menu when I booted asking which to use.
