I installed and formatted a brand new drive in my PC to put Windows 7 on.
I installed Win 7 from a backup dic instead of the DVD drive and selected the new drive as the destination.

All is well and I can dual boot by eithr selecting Win 7 or Vista however something strange has happened which I really don't understand....

I decided to unplug the new drive with Win 7 on as I am going away and wanted the wife to have the pC back to normal without having to select the OS.
When I reboot with the drive unplugged i still get the option to load Win 7!
If I try I get missing OS errors as you would expect.

My question is....why do I still get this option to load Win 7 without the disc attached? -In the installation some boot file has obviously been put on the main C drive. How can I remove this file and what should I look for?

You get the option because the information to boot is stored in the boot ini of the main hard disk. The Windows files will all be on your removed hard drive. You can change the file with EasyBCD (google it), however I'd just select a default OS and lower the time counter so that it does not wait so long, then you can always have your Windows 7 installation intact when you return.
