Dual boot with seperate hard drives?

Hi,

My current computer is set up to dual boot with XP and Vista on separate partitions of the same hard drive and I get a little message asking me which I want to boot to when I turn the computer on.
If I don't choose one after a few seconds it automatically boots up Vista.

That's great, and now I'm building a new rig I intend to do the same thing but with each OS installed to a separate hard drive. I assumed it'd be just as easy to do and I'd get the choice of which to boot to on startup... So I googled just to make sure and all I can find are threads on dual boot from the same drive.
Even the threads asking about dual booting from separate drives are given the solution of dual booting from a partitioned drive!?

Is it possible?

When i installed a second fresh hard drive and installed Windows 7 on it in my Vista machine it created a dual boot system in the process and i had to do nothing, i was not even aware it had done this till i booted it after the install. The boot priority is changed in windows and not bios.
