I have two matching sticks of RAM, 4GB each 2133MHz, can't remember the timings. I also have two matching sticks of 2GB each 1600MHz, also can't remember the timings but let's assume they're different.

Can I put the two sets together to upgrade my 8GB to 12GB? Will Dual Channel still work? Will both sets work in dual channel? I guess I can just stick them in the PC and try...

I have 4GB and 2GB sticks. Both DDR3 10600U 1333MHz. One timing looks to be "9 9 9", the other "9 10 A0" Can these two be paired together and have dual channel active despite different capacities?

Yes.
Disable XMP
Reset Bios
Put the 1600Mhz kit into Channel A, and the faster ram into Channel B and your system will run all sticks at the slower speeds.
Enable XMP and all sticks will run at 1600Mhz CLXXX's

Yes again put the slower ram in slot A1, and faster in B1
