Dual Nic's- Dumb Question

I have a ML110 G7 with two network ports, I use it as a server to stream around the house.

I am supposed to put one ethernet in port 1 from switch for IN and another in the second port for out going back to the switch?

No.

You could connect to two different networks if you wanted. Or if your switch supported it you could 'team' both connections for extra bandwidth

1Gbps is 1Gbps - yes. As Geuben said, to get the most out of this you need to look at the teaming software that's available so you can then control the behaviour / load sharing or failover.
