1 SMP client should handle it in my experience.
I briefly ran the FAH SMP client on a server with 2 X5690s (6 cores each) and only had to run one client with the "smp -24" flag set
Just set the thread count in the config to the number of cores seen by the OS e.g if both xeon's are quads, then set it to "-smp 16" if both are hex-core then "-smp 24"
That sounds like you have the non smp client installed or the gui client maybe. Not sure if the gui client works with smp, but if it does you will have to add it in the Additional Client parameters in the Advanced tab
