Duck breast - What to make?

I love a kind of Chinese style duck we do with pak choi and spring onion mash. It's awesome.
Marinate for duck is: Ginger, Garlic, Honey, Soy, Olive Oil, 5 Spice, Star anise, Sherry. Marinate for a few hours, slap it in pan skin side down and pan fry, then finish in the oven.

Use rest of the marinate to make a sauce on the hob, to cook your pak choi in.
