What progs exist to encode original DVD-Videos to Xvid AVI's? What filesize would you recommend to get near original picture quality and multi-channel DD/DTS?

Winavi but it costs money. Or virtualdub my fav which is free. Using 2 pass encoding with the xvid codec setup properly 1.2Mbps should be perfect quality. For multi channel use the AC3 codec at about 384Kbps.

Auto Gordian Knot is another, free, encoder. It works with either Xvid or DivX, but I only use Xvid on mine. It's not hard to use, but I set it so that it take between 700Mb and 1Gb per hour of encoding and it's looks fine to me.

Not sure about the DTS but you can have AC3 fine, although I've never messed with it as I've only ever encoded Xvids with CBR Mp3 sound.

I think ogg supports 5.1 as well, that would be the best codec to use if your not bothered about encode times, there would be no problem at 256kbps probably even lower bitrates it would be fine.
