I have just built a new system with an e2180 and p5k premium motherboard. I am however getting very inconsistent temps reported by differnt monitoring applications:-

TAT 32 idle, 55 load
Speedfan v4.33 28 idle, 58 load
Core Temp v0.96 43 idle, 72 load

Any one else experienced such a variation, and which do I trust?

I've built a similar system (e2180 and a P5K) and I'm getting those sort of temps. Coretemp is consistently 15 degrees warmer than Intel TAT, and on other chips they used to agree.

I think maybe TAT is too old for this new chip?

looking over on the Core Temp forums and things do look confused. I have a M0 e2180 and Core Temp v0.96 uses a fixed Tjunction of 100°C for this. However there seems to be some debate as to whether this is correct, and it looks like it might be changed in the next version of Core Temp - not sure whether this is correct or not. For the moment I will go by the Core Temp values as the consesus here is that these should be correct.

i've had a read but it just seems to be technical information really. what is the real world impact of the chips having a higher temperature threshold and running a bit hotter?

Very little I would think, apart from giving us m0 21xx owners a heart attack when first upgrading to version 0.96 of coretemp.
