Early explore into an upgrade - 11th gen intel to ???

A massive mind dump here - I think I have a problem, where I want to build a system even though I may not use it's capability much!!

I do more office work than anything but occasionally fire up a game to play casually. So ideally I want a low power draw for office working. I guess I want it all - the power there if I chose to use it, but low power draw and quiet operation when not.

Currently I have
* B560m Mortar wifi
* i5-11600k with Corsair Aio cooler (240mm)
* 16Gb 3600Mhz RAM
* 1TB sn850x
Kolink citadel mesh micro ATX case (Id like smaller, or to move this onto the floor, but dust worries me)
Running 1440p on a Dell S2722DGM.
I have a good modular atx platinum PSU so power isn't an issue.

I've read that my CPU may bottle neck the GPU but I also feel like the 3060ti is struggling with some of my uses below (namely PCVR). I want to know, how future proof is this? How should/could I upgrade this? Prioritise CPU and go ddr5 over GPU?

To be honest, I hardly game (although would like to more - with more time). Ive just got a quest 3 and have tried (via Steam link) half life 2 vr and star wars squadrons. Hl2 runs well, squadrons is more stuttery in VR (smooth on desktop)
Ms flight SIM VR would be fun but I don't feel confident in the system after one or two crash to desktop/power offs, because I have the gfx and Resolution set too high for a 3060ti to cope with maybe? Again, MS flightsim runs acceptably at 1440 (non vr) with setting at medium/high

I don't NEED to upgrade based on my use, granted, but I wonder if it's time to do something before the components lose too much value to help fund any upgrade.

Sounds like a mid life crysis ;)

11600k is no slouch for 1440p gaming, 16gb of memory may be causing a problem with vr but you need to check memory usage.

Tell me your games are on an m2 .
Everything is on the sn850x .

Ram - yeah I was thinking this so looking for 32Gb

And gfx - I am kinda set on Nvidia brand loyalty, but not a given really - would upgrade if the price was right and worth it and CPU wouldn't be a bottleneck.

Perhaps I'll start with RAM and see how that goes.
