A good steak is very easy and quick, i use well matured sirloin , at least 1 inch thick, plenty of marbling, and preferably left in the fridge for an extra week to mature. Switch on the oven to 200C and get a griddle pan heating in there. Take the staeak out to warm up to room temperature, drizzle of olive oil, fresh ground black pepper and sea salt, perhaps crush a garlic clove on each side if you fancy.
When the griddle pan is hot put it on the stove at high heat until it is smoking and slap down the steak. Don't touch it or turn for a good 2 minutes- you have to have faith in the process while it hisses and smokes up- that is sealing in all the goodness and adding a tasty bark. When 2 minutes are up turn it upside down and do the same to the other side. After those 2 minutes are done put it back in the hot oven for about 3 minutes depending on how you like the steak. take it out the oven and let it sit for 2-3 minutes so the juices get soaked in. If you wan you can glaze the griddle pan with some red wine, or throw in some whisky and cream.
You can't get any tastier than that and cooking time is only about 10 minutes. I serve it with some fresh vegetables or a salad.
