Also which i7 is the best for gaming?

Do you need an i7 for some other uses than just gaming. As an i5 3750k is all you need for gaming.

And would it be better to get a second 560 or a 660 Ti?

Second hand 560, if you can get one. Usually go for £100-120.
Or sell your 560 and get a 7950, unless you need Cuda for any software programs. Then get a 670.
 
As others have said, the only advantage an i7 has over an i5 is hyper-threading, which does not benefit gaming at all.

You could always get a second card due to already having a 2GB card so memory wouldn't be as big an issue. however I had SLI 560TIs and the noise and heat lead me to buying a GTX 670.
