Editing a vector image?

Hi all... Basically I'm a bit of a newbie to editing vector images. I got someone to design a logo for a university society and they've sent me it in a few different formats:

Adobe Illustrator EPS
Adobe Illustrator AI
Adobe PDF
Enhanced Metafile
JPG
PNG
Windows Metafile
Vector EPS

The problem is I've only got Photoshop 7.0 and I'm not sure how to go about manipulating it. Basically what I need to be able to do is change the colour of the logo, manipulate the size and use drop shadows etc. The logo as it stands is black and I want to have it white with a navy background.

Could somebody tell me what the best way to go about this is, and also what the best file type to use as my standard is? It will be used for print media, t-shirts etc. and the website.

Any of those, if you need help editing just contact me =) Photoshop is a bit restricted with vectors.

Seems to alright...

One problem I'm finding now though is when I edit the background colour in Inkscape it comes out a darker blue when I then open the EPS in Photoshop. Any ideas why that would be?
