Editing .PDF files?

Does anyone know of any free software that would allow me to edit a .PDF file?

At a pinch, extracting the text and formatting to some other document format would suffice.

Two companys sent out job applications in PDF format and I searched for the same thing but had no luck.
In the end I had to be naughty and obtain one from somewhere and uninstalled it when I'd done.

You can extract the text using the select tool available on standard PDF reader.
