EE PAYG packs

I can't figure this out, so you pay for a 'pack' out of your credit, which has to be topped up every month, which can be paid for out of any remaining credit (if I've understood it right that is)

But does any left over data/calls/texts stack from month to month or do you just start from scratch for the next month? it's too confusing :S

When the contract runs out on my 4S I'm looking at a PAYG sim card for it and judging from my work phone, EE coverage seems very good, my work phone can get 4G where my Talk Mobile/Vodafone signal barely picks up a GPRS signal....
 
Currently using their packs. 15 per month which you top up credit then purchase a pack.

Gets you 2.2gb unlimited texts and 500 or so minutes I think. Giffgaff is better as you get 3gb.

Minutes data and texts don't roll over.
 
So it's still basically a monthly outlay, so no different to a contract? :S

Can you still just opt for the traditional PAYG of topping up when you like rather than fixed every month? I barely use my phone so anything other than the occasional top up is just money down the drain.
